Cumin-glazed sweet potatoes
Go a little crazy with the sweet potatoes this Purim Holiday!

Portion Size: 4 oz.
Ingredients:
4 lbs. peeled sweet potatoes
½ tsp. cinnamon
Pinch of ground cloves
Grated zest and juice of 2 oranges
½ tsp. chili powder
2 tsp. cumin powder
1 T. Mexican oregano
¼ tsp. ground black pepper
4 cloves fresh chopped garlic
1 T. honey
1 T. olive oil
Salt, to taste
Garnish:
Chopped fresh cilantro
Drizzle of heavy cream
Directions:
Combine spices and garlic in a food processor. Add the honey, olive oil, orange juice and zest. Add salt to taste.
Place the sweet potatoes in a greased hotel pan. Spoon glaze evenly over the potatoes, cover with foil and bake in 350º F. oven until fork tender (about 45 minutes).
Remove foil and turn oven up to 450º F. and baste potatoes, and continue baking until potatoes are nicely glazed (about 10 minutes).
